Salgam Suyu 02.jpg

Turnip juice (Şalgam Suyu) is a popular beverage from southern Turkey's city of Adana. Although its Turkish name şalgam suyu (or shortened, şalgam) does literally mean "turnip juice", it is actually made with the juice of black carrot pickles, salted, spiced, and flavoured with aromatic turnip (çelem) fermented in barrels. It is traditionally served cold in large glasses with long slices of pickled carrots, called dene. Hot paprika relish is added just before drinking. Hot or regular, it's a popular drink with Adana Kebab.

Şalgam suyu is often served as a complement to rakı, and is commonly used as a hangover curative. Consuming excess amounts may cause bloating.
