Aardappelsoep is an extremely light and soft vegetable Dutch soup. There are many variations regarding the recipe of aardappelsoep, all of them sharing the same main ingredient, and namely- potatoes, which are usually mashed at the final stage of cooking. Warmed milk is then being added to the dish, due to which Aardappelsoep gets a pleasant and smooth texture.

Leek, onions, white wine and thyme transform this dish into an irresistible delight and make it extremely tasty. Beef bouillon cubes may also be added to the soup, thus enhancing its flavor.

Aardappelsoep is mainly served as a hot meal, during cold winter days.
