Abbacchio alla cacciatora (Lamb "Hunter" style) is a popular dish in Italy. The main ingredients are lamb (typically chops or a combination of shoulders, ribs and kidneys), flour and rosemary. The lamb is usually browned for a while. Minced rosemary leaves and garlic are added then. Flour is used to thicken the liquid. Other ingredients such as onions, anchovies, wine can be used in cooking as well. The dish is served hot. It matches well with fried potatoes and it can be garnished with rosemary sprigs. In Rome and Lazio region, it is a famous dish for Easter lunch.
