Aborrajados, known in English as Ripe Plantain Fritters, is a delicious side dish or snack. It has several ways of preparation. The traditional one includes such ingredients as ripe (black) plantains, baking powder, salt or sugar, oil for deep frying and cheese. The plantains are fried, mashed with a bag and wrapped with cheese. Then these are dipped in batter prepared with flour, egg, half the milk, sugar, salt and vanilla essence, and, in the end fried in plenty oil until golden brown. Sometimes, guava paste is added between the plantains. The dish is usually served warm along side with some cheese.
