Affettati Misti with green olives

The affettati misti represents a very popular Italian appetizer - a variety of the traditional antipasti (diversity of cold cuts served on a tray). The Tuscan variety of the affettati misti may include sopressata, prosciutto ham, finocchiona salami, capocollo, mortadella and pancetta. The meat cuts are oftenly accompanied by ricotta, raveggiolo or/and pecorino cheese. The appetizer may be also enriched with raw figs and beans. The dish is usually decorated with young salad leaves. The affettati misti is traditionally served with slices of bread arranged in a separate basket. The best wine to go with the present dish is any young chianti.
