Ají de Lengua
Ají de Lengua is a tasty spicy dish that is extremely popular in Bolivia. Its ingredients include: beef tongue, onions, parsley, green peas, tomatoes, which are peeled and finely cut and ground spicy red pepper, which makes the dish even more piquant. The use of such condiments as ground cumin, black pepper and salt gives the soup a special flavor. It takes quite a lot of time to prepare ají de lengua, but when it is ready, it is like a divine combination between spicy salsa sauce and soft beef tongue.
Ají de Lengua is recommended to be served along with boiled potatoes or white rice.
