Apfelküchlein, literally translated as apple fritters, is a Swiss dessert which has a practically world wide popularity. A big variety of fruits are used in the desserts recipes of Switzerland and deep fried apple cookies include the classical apple cider which gives an amazingly sweet and tart flavor that is part of Swiss tradition. The ingredients for Apfelküchlein are: tart apples (especially Macintosh, Jonathan, etc.), flour, salt, sugar, vanilla sugar, apple cider, eggs, oil, hazelnuts, lemon juice, and confectioner’s or cinnamon sugar.


Flour, hazelnuts, salt, sugar and vanilla are all mixed in a bowl to which apple cider, egg yolks, and vegetable oil are stirred to combine the components in a homogenous structure. The apples are peeled and cut into rings, mixed with sugar and tossed in lemon juice, then dipped in the flour and cider mixture and quickly fried on both sides in hot boiling oil. The fritters are served warm, sprinkled with confectioner’s or cinnamon sugar and accompanied by some warm vanilla sauce. The flavors of this dessert makes one forget about the routine of the day, and helps to enjoy these delicate fruity cookies.
