Aspergesoep, translated as "Asparagus soup", is a well-known dish in the Netherlands. It is a clear soup and might be served as a starter. The ingredients for the soup are: thin fresh asparagus, potato flour and chicken stock. The preparation of the dish is easy, but a little bit time consuming. Chopped asparagus is cooked for about an hour. The obtained asparagus liquid and chicken broth are brought to a boil and binded with the potato flour. Finally, warm pieces of asparagus are added. The soup is served hot and it usually looks amazing when served in glasses as an appetizer.
