Bıldırcın Izgara is the Turkish name for grilled quail. Quail meat is dark and richly flavored, and is very tasty on its own. It is usually prepared for celebrations or cooked at picnics. The preparation process is easy and doesn't need many spices as quail is full of rich taste. First quail is cut along backbone, and bones are removed. Then it is marinated for several hours. When the quail is ready it is put flat on the grill and grilled on both sides. Salt and pepper are added to taste. Bıldırcın Izgara is usually served with potatoes and garnished with carrots.
