Balmoral tartlets are one of the most delicious Scottish traditional desserts. They are made of shortcrust pastry filled with crème. The pastry is made of flour, butter, lard and water. The filling of Balmoral tartlets is made of butter (or margarine), sugar, eggs (usually split), cherries, cake crumbs, peel and cornstarch. The ingredients of the tartlets’ crème are mixed in a certain order and filled into the pastry. Then the tartlets are baked till golden. Before serving the Balmoral tartlets are cooled and sprinkled with some icing sugar. They go well with some tea or coffee for any occasion or gathering.
