Barbunya Pilakisi is a Turkish cold dish that belongs to 'olive oil' group of dishes. It is especially delicious in summer, when Barbunya beans appear. The traditional ingredients used for the dish preparation are barbunya beans, onion, garlic, carrot, potato, tomato paste, parsley, and olive oil. The beans are soaked overnight, then cooked, drained and set aside. Chopped onion is sauteed in a saucepan, then tomato paste, salt and little sugar are added, stirring well. When the sauce gets fragrant, cubed vegetables, garlic and beans are stirred in, covered with water and cooked until vegetables are soft. The dish is served cold, garnished with fresh parsley and lemon wedges.
