Baud bree

Bawd Bree, also called Hare Soup, is a popular traditional soup in Scotland. Hare is the game used for this soup, usually using the best parts of the meat cut into small neat steaks. The blood of the hare is very aromatic and is used in the preparation of the soup too. The meat is fried in butter, then boiled with potatoes, carrots, mushrooms. The blood is added to make this soup thicker and more aromatic. Sometimes browned flour is added to make it even more thick. It is usually served with parsley.
