Bayericher Kartoffelsalat, literally translated as “Bavarian Potato Salad”, is a traditional side dish served at all German restaurants and commonly complemented by either sausages or loafs of meat. The ingredients used to make this salad are: potatoes, caraway seeds, salt, onions, chicken broth, white wine vinegar, sugar, pepper, vegetable oil, parsley, bacon (optional).

Preparation

Potatoes are boiled in water along with salt and caraway seeds and placed in a pot, later being cooled and peeled; a topping sauce made from chicken broth, vinegar, sugar and oil is prepared which is poured into the sliced potatoes that are consequently left for some hours to marinade. This salad is served being greased over and sprinkled with bacon cut into small pieces and chopped parsley or green onions.
