Bean Curd Barley
Bean Curd Barley is a sweet and healthy Chinese desert. The soup has barley, bean curd skin and gingko nuts as the main ingredients, and it usually takes about an hour to prepare. Bean curd skin has to be soaked in water for some time until it gets soft. Then rinsed barley together with pandan leaves are put in a pot and brought to boil, then simmered. After about half an hour Gingko nuts are added and simmered for 20 minutes. When the nuts are almost ready bean curd skin, cut into pieces, is added to the pot. In the final stage of the preparation a beaten egg and sugar are gradually added and stirred well. The dessert may be also prepared without gingko nut or with snow fungus instead. The soup is served chilled, and is best eaten as a summer meal.
