Beer soup

Beer soup (soupe à la bière) is a very popular dish in the Northern Europe since Middle Ages. First time the beer soup was mentioned in a book was in year 1472. The soup is made of boiled beer with some butter, sugar, cinnamon, lemon zest and some wine. Latter to the soup are added egg yolk and sometimes cheese too. The Beer soup is served with bread, toasted or fresh that is either thrown into the soup or the soup is poured on the bread. In other countries to the soup can be added other ingredients too, like potatoes, flour, milk, onions, herbs and others.
