The Berlingozzo is a cake from Lamporecchio, in the province of Pistoia, central Italy. It is a simple ring-shaped cake, and it has its origins in the time of the Medici. It is a typical Carnival cake, its name appearing to derive from the word Berlingaccio, meaning “Fat Thursday”.
The berlingozzo is also traditionally prepared as a wedding treat.
The dough for the cake consists of plain flour, butter, eggs, sugar, lemon or orange zest, milk, baking powder. The cake is baked in the oven for a little less than one hour.
