Beyin Salatası, literally translated as "Brain Salad", is an old delicacy, which belongs to the Ottoman Cuisine. This is a recherche, as it has no any intense pleasant flavour, but has special nutritious features. To prepare this dish, first lamb brains are soaked in cold salted water for about half an hour, and cleaned of their membranes. Then it is poached in boiling water together with vinegar and little salt for five minutes; let cool in the same water, removed and placed on a serving plate. It is usually garnished with parsley and olives, and sprinkled with olive oil and lemon juice.
