Turkey is a country with one of the richest cuisines in the world. It is famous for its large variety of Dolma. Dolma is a family of stuffed vegetable dishes in the cuisines of the former Ottoman Empire. Turkish dolma is prepared from almost every vegetable that may be stuffed. Biber Dolması are red or green peppers stuffed with rice. The most common recipe for this type of Dolma filling includes ground meat, butter, onions, tomatoes and chopped dill. Thinly sliced onions are sauteed in a pan with melted butter, then rice and water are added and cooked for ten minutes. The ground meat, dill, finely cut tomatoes, black pepper and salt are added to rice, and the stuffing for dolma is ready. The peppers are carefully cleaned of the stalks and seeds, stuffed with this rice mixture, closed with their lids and cooked with water for an hour or so. There is also a vegetarian variation of Biber Dolması with no meat. Biber Dolması is best served with yogurt mixed with chopped garlic.
