Bolo de Macaxeira is a Brazilian variation for cassava cake. This is a light dessert with tender taste melting in one's mouth. The cake is very easy in preparation and includes such common ingredients as peeled and chopped cassava, eggs, sugar, milk, sweetened condensed milk, shredded coconut, coconut milk, grated cheese and salt. All the ingredients are just mixed in a blender. Then the mixture is poured into a baking form and cooked until golden brown. The dessert may be served cold or hot, and is one of the most popular dishes during June festivals.
