Broccoli and cauliflower salad is included in the list of healthy food in Switzerland and is extremely popular with those who care about their physical state. This salad is a perfect combination of two vegetables, broccoli and cauliflower, as the basic ingredients together with other making parts like: onion, lemon juice, salt, white pepper, olive oil, marinated red pepper or fresh sweet red pepper, basil, lettuce and black olives for garnishment. The classical recipe states that the vegetables are steamed first until they become tenderer but still crunchy, although, there are variations of this with raw broccoli and cauliflower, all depends on the customer’s taste. To the steamed florets lemon juice, chopped onion salt and pepper is added, after which a sauce made from olive oil, chopped pepper and basil is poured on the top and all is thoroughly tossed. It is served as an appetizer or side dish on a plate or salad bowl, dressed with other seasoning and decorated with olives. This is a low calories food famous with the locals and tourists as well.
