This popular Turkish pilaf is prepared from Bulgur and is usually served as a side dish. Bulgur (also bulghur or burghul) is a cereal food made from several different wheat species, most often from durum wheat. Its use is most common in Middle Eastern cuisine, Turkey, Greece, Armenia and Bulgaria.
Bulgur Pilavı has a simple recipe and is fast to prepare. Its classical recipe includes tomatoes, onions, green peppers, olive oil and different spices. The onions and green pepper are sauteed in olive oil until they are soft, mixed together with chopped tomatoes, butter, tomato paste and salt. Then the broth and bulgur are added and cooked until bulgur is soft. The dish is best served with grilled meat, chicken or casserole, and as a separate dish with yogurt.
