Bulion cytrynowy „Zakochani w Krakowie”
Bulion cytrynowy „Zakochani w Krakowie”, translated as Lemon bouillon „Kraków lovers”, is popular not only in Poland, but also in other parts of the world where it is offered as a light and healthy soup on the restaurants' menus. The ingredients typically used to prepare this dish are: vegetable broth, smoked bacon, lemon, egg yolk, castor sugar, spices and herb leaves.
Preparation is simple, easy and does not require much time, as the broth is brought to a boil, after which half a cup of it is poured out, left to cool and mixed thoroughly with the egg yolk; fresh-squeezed lemon juice is added into the remaining broth. The final taste of the dish is enriched with different seasonings like salt, pepper and castor sugar to taste and herbs like thyme, basil, lovage. Lastly, the mixed egg yolk is added to broth, stirring constantly without boiling. Bulion cytrynowy „Zakochani w Krakowie” is served hot, ladled into soup-bowls and garnished with fresh chopped parsley.
