Butternut Squash with Coconut
Butternut Squash with Coconut is a delicious dish, very popular throughout Scotland. Even though there are many variations of this dish, the main ingredients of it remain to be the butternut squash, vegetable oil or butter, onions, garlic, ginger, curry powder, thyme, brown sugar and unsweetened coconut milk. The ingredients are simmered till soft and served as a blended soup, the butternut squash being cut in cubes and garnished with sauce. Other variations of the recipe call for first baking the butternut squash with some oil, then serve it with the sauce made of the above listed ingredients. Sometimes, fish sauce, red pepper or chili, cilantro, leek, shallot, white wine, broth or water, lime leaves, and carrots may also be added to the dish in order to increase the flavor and confer it a richer texture. Butternut Squash with Coconut is usually garnished with toasted coconut, though it can also be seasoned with cilantro or lemon juice before being served.
