Calamari in zimino


Calamari in zimino (Squid stew) is a Florentine and Tuscan specialty. Even if the number of the ingredients of the present dish is not big and the process of cooking is extremely easy, the calmari in zimino has an incredible aroma and a very rich taste. The stew is made of cleaned squids, spinach or Swiss chard, extra virgin olive oil, tomatoes, onions, garlic cloves and salt. The ingredients are best cooked in an earthenware casserole. The calamari in zimino is served while still hot, with fettunta and a glass of Greco di Tufo wine.
