Caldo de verdure is a soup made of vegetables and herbs. There is a large number of variations of the Caldo de verdure recipe. The most popular recipe of the dish is made with carrots, onions, tomatoes, peppers, leek, celery, garlic, bay leaf, zucchini, spinach, parsley, curry, chickpeas and oil. Some vegetables can be fried a little in oil before ahead or all the ingredients are mixed and boiled. Other recipes of the Caldo de verdure can include vegetables like potatoes, mail, mushrooms or other vegetables and herbs. Also, Caldo de verdure can be done with meat too. Usually chicken or beef meat are used to prepare it. As well, sometimes to the Caldo de verdure rice or noodles can be added. Most popular way of serving Caldo de verdure is to put vegetables in one plate and the vegetables broth in a pot, but it can also be served mixed into a crème or like a soup. It is served always hot and with some bread.
