Caracoles a la madrileña is a typical dish of bars serving Madrid cuisine. The main ingredient for this dish are the snails that are simmered in a concentrated meat broth. The dish usually has a slightly spicy flavor due to the chili pepper that is added to it. The snails are served warm usually in spring when the snails are collected in high amount. It is traditionally served in an earthenware casserole and is accompanied by a glass of red wine.
