Carbonada is a delicious soup that is very popular during cold winter days in many Latin American countries, originally Argentina and Uruguay. Now, variations of the soup are prepared all over the world.

The traditional carbonada is a beef stew with onion, tomatoes, sweet potatoes, carrots, ears corn and dried fruits (apricots or raisins), prepared inside a whole pumpkin. The unusual combination of ingredients yield a delightful dish.

It is usually served with cornbread.
