The Casseruola alla fiorentina is a very nutritious dish, most popular in Florence and the surroundings. The recipe, with small variations depending on the traditions and area, includes diced chicken breasts without bones and skin, flour, chicken stock or mushroom soup, cubed cream cheese, mozarella and/or parmesan cheese, chopped spinach, mayonnaise, sour cream, garlic cloves, as well as crumbled bacon or sausages. Some versions include pasta (penne or bow ties) or noodles. The chicken and the pasta are cooked separately. Finally, the ingredients are mixed and cooked in a casserole. Other recipes of the casseruola alla fiorentina suggest that the chicken breasts can be replaced with fish or shrimps. The dish is best served chilled, with a glass of cold chardonnay.
