The chestnut cake is baked from chestnut flour, water, olive oil, pine nuts and raisins. This dessert is very popular and spread in Tuscany, Liguria, Emilia and Piedmont. Local variations consist in the addition of the ingredients such as rosemary, fennel and dried fruit. Once the chestnut was a staple food of poor, widespread in the Apennines. Nowadays it carries a significant cultural importance. People celebrate chestnut harvest and organize festivals by making sweets from chestnut flour, among which is the chestnut cake.
