Cazuela Gaucho is a traditional Argentinean chicken stew. This delicious and hearty dish consists of chicken, parsnips, potatoes, carrots, corn kernels, pumpkin, barley, peas, green beans, onions, garlic and spices. Cooking process involves vegetables (except beans) and chicken pieces being sautéed separately. Sautéed vegetables are then mixed with fried chicken pieces; all these are poured with white wine and chicken stock and the dish is left to simmer for a while, after what barley is being added. Bay leaf, salt and pepper are common spices for an extra flavor. Just before the dish is done, green peas are added and the dish is left to cook for another 5 minutes. Aromatic Gazuela Gaucho stew is served hot in deep plates or bowls.
