Charque de llama

Charque de llama represents a kind of jerky made of llama meat, very popular in Bolivia. The meat is first of all dried with a big quantity of salt, then fried and served, usually with stewed corn, a piece of home made cheese (Quesillo) and hard boiled eggs, potatoes and tomato and onion salad. The charque de llama is a very appropriate snack to accompany Chicha, Chicha de Mani or any beer. The jerky can be used in the preparing of diverse sauces like the Jerky Tomato Sauce, which also includes tomatoes, bell peppers, onions and cream.
