Cheese Azeitão

Azeitão Cheese is a kind of sheep cheese made in Portugal in Azeitão region. Azeitão cheeses have a cylindrical shape, about 8 cm in diameter and 5 cm in height. It is prepared with thistle flower. The Azeitão Cheese has a very strong, earthy flavor, can be eaten soft or more matured. If ripe, it has a creamy and flowery aroma. Traditional Portuguese cuisine does not include cheese in its recipes, so it is usually eaten on its own before or after the main dishes. Azeitão cheeses can be eaten also spread on some bread. It can be served as a side dish, as a snack or even as a dessert with some red wine. Azeitão cheese is served at room temperature.
