Chicheme is a nonalcoholic drink found almost exclusively in Panama. It is made from milk, sweet corn or cornmeal, cinnamon, vanilla, and often water as well. This smooth and creamy delicious drink is served cold along with various sweet breads or pastries. Typical preparation involves corn kernels being soaked in water for several hours (usually the day before serving the drink); after which salt is added and the corn is left to boil until cooked. Then the mixture is chilled and flavored with vanilla and mixed with cream and milk.
