Chicken soup

The classic chicken soup consists of a clear broth, often served with small pieces of chicken or vegetables or noodles or dumplings or grains like rice and barley. Chicken soup has acquired the reputation of a folk remedy for colds and flus, and in many countries is considered a classic comfort food. It has been used for healing colds from at least the 12th century. Modern scientists have confirmed that chicken soup does have anti-inflammatory effects, however it is still unclear whether this is the effect of a certain ingredient or that of the combination of ingredients used in the soup.

Chicken soup is usually prepared using old hens that are too tough and stringy to be roasted or cooked for a short period of time, however in modern cities broiler chickens are often used for the soup. Still soup hens or fowl are to be preferred when available.

The French serve chicken-based forms of bouillon and consommé. Typical French seasoning for chicken soup includes: bay leaves, fresh thyme, dry white wine and garlic.
