Chunky Vegetable soup is a delicious Scottish dish, served mainly during winter time, that is prepared with raw or frozen vegetables. The preparation of Chunky Vegetable soup calls for the use of all kinds of vegetables and herbs of the region. These include potatoes, onions, garlic, tomatoes, carrots, leek, fennel, swede, thyme, parsley, celery, parsnip, sweet corn, basil, marjoram, cabbage, peas, broccoli, chili and others. The vegetables are combined in different variations, one of the most popular version being the Chunky Vegetable and Lentil soup. The vegetables and herbs are first simmered in some oil then boiled in water or broth. The soup has a rich flavor, it being served hot, seasoned with some herbs and with fresh, crusty bread.
