Ciarduna siciliana is a traditional sweet pastry from the province of Palermo, Sicily (Italy). It consists of an almond cookie shell filled with a ricotta or mascarpone filling. Some variants are also covered with a shell of chocolate or chocolate frosting and powdered sugar.
The dough for this Italian pastry is made from flour, sugar, lard, vanilla for flavor, yeast and milk. Ciarduna is baked and then dusted with ground almonds and powdered sugar. Icing sugar may be used to garnish the ready ciarduna. The filling is very simple to make. It is made from Ricotta cheese and may have the flavor of lemon, as lemon essence is often added.
