Coniglio arrosto with diced potatoes and pumpkins

Coniglio arrosto is a very light and easy to make dish. The main ingredient is the rabbit meat. The cleaned and chopped rabbit is simmered together with aromatic herbs like rosemary sprigs, sage leaves and thyme, as well as chopped garlic cloves, onions and pepper. When the meat obtains a light brown colour, a glass of dry white wine is poured into the pan. The coniglio arrosto is cooked for one hour with the lid on. Sometimes the dish is enriched with black olives, which are added when it is almost ready.
