Couscous Bean Salad is a mouth-watering salad often served as a gentle start for a heavier meal.

The boiled couscous gets mixed with the already cooked and slightly tender corn, as well as with a blend of chopped fresh vegetables consisting of tomato, pepper, garlic, green onion, cilantro and parsley. Black pepper, lime juice and cumin is then added to the dish and refrigerated for at least half of hour before being served.

The combination of grains and vegetables constitutes a complete source of protein. This quick and easy to prepare dish represents a great salad for a buffet, being characterized by interesting textures and specific flavors.
