Crillo de Pollo

Crillo de Pollo is a traditional Argentinean chicken soup. The soup has a rich taste and distinctive flavor due to great number of fresh vegetables and spices. The preparation involves chicken pieces being rubbed with salt and pepper and baked with onions, bay leaves and garlic until golden brown in color. Baked chicken with spices are then placed in a pot and poured with stock, followed by chopped potatoes, carrots and corn. When the soup is almost done, beaten egg yolk is added to thicken the texture of the soup. Aromatic and delicious Crillo de Pollo is served hot sprinkled with parsley and cilantro.
