Crofter broth

Crofter broth constitutes a classical Scottish recipe for a rich and delicious stock of bacon, potatoes, carrots, leeks, and cabbage cooked in chicken broth.

Though it requires some time, the preparation of this dish is rather simple. At first, the bacon is finely chopped and cooked over medium heat until it gets brown in color and it releases its fat. Meanwhile, the leeks are gently sliced and added to the mixture. They are covered with buttered greaseproof paper and let steam for about 10 minutes, after what the paper is removed in order for the carrots and cabbage to be added. Finally, the mixture is covered with broth and cooked over low heat for about 20 minutes until the cabbage gets soft.

This soup is served warm, it being considered a very healthy and consistent meal.
