Crudités are traditional French appetizers comprising sliced or whole raw vegetables which are dipped in a vinaigrette or another sauce. Crudités usually include celery sticks, carrot sticks, bell pepper strips, cauliflower, broccoli and asparagus spears. Some vegetables used as crudités like broccoli and cauliflower are blanched to make digestion easier.
Crudités are served as appetizers in most cafés and restaurants in Paris and throughout France. Usually crudités are served in small slices just enough to provide a bite or two.
