Soups take the central place on Turkish table. Düğün Çorbası is a soup served on special occasions, and the literal translation of the dish name is 'Wedding Soup'. The main ingredients for Düğün Çorbası are lamb or beef meat, beef broth, cayenne pepper, egg yolks, onion, melted butter, fresh lemon juice, ground cinnamon, carrot, and olive oil. The variations of the dish differ slightly, and may have chicken broth instead of beef broth, and marrow bones or lamb ribs.

Preparation method


The easiest recipe of Düğün Çorbası says that first lamb is coated with flour and fried in a kettle with oil until brown. Then chicken broth, halved onion, marrow bones, carrot and pepper are added to the kettle. When the stock is boiling, the heat is reduced, and the soup is simmered for two hours. When the soup is ready, the bones, carrot and onion are removed, and eggs beaten with lemon juice are added; then the soup is heated, stirring constantly.

Serving


Düğün Çorbası is served in soup plates, drizzled with a mixture of melted butter and paprika, and sprinkled with cinnamon.
