Danzai noodles, literally translated as “noodle cart on the street”, are very popular in Taiwan, especially in Taipei, where one can find even a Noodle House which sells the best ones. The dish has a soupy structure and its main ingredients are noodles and a topping of braised pork. The oily noodles are a perfect choice for this dish, especially when prepared with stewed pork meat sauce and a shrimp based stock. The meat is grounded and braised in soy sauce, rice wine and other common seasonings. Danzai noodles are served hot, in a soup bowl, traditionally topped with soy sauce, a few shrimp, chopped green onion and a hardboiled egg. The dish is simple but rich in taste and flavor.
