Dou pi (豆皮)

Dou pi is a dish commonly served at breakfast in Wuhan, but also eaten during the day as part of the basic meal, and it consists of sticky rice, eggs, meat (usually beef), mushrooms and beans. All these components are stir-fried, combined together and wrapped in a soy skin; when cooking the Dou pi-s the temperature of the fire is very important, as they should result into a crispy cover but juicy filling delicacy. Many tourists who have tried this dish claim that it is a “must try” when visiting Wuhan; the locals cook it very often and the dish is a basic component of most restaurants’ menus. It may not be one of the healthiest foods, as it is fried, but it is for sure delicious, aromatic and hearty.
