Dršťková polévka is a tripe based soup, traditionally served with baguette. Although it may sound to some people like a rather unusual dish, it is one of the most famous in the Czech Republic. A traditional Czech tripe soup usually contains boiled beef stomach cut into fine strips. The meat is cooked with a powdered marjoram, garlic and paprika mixture which gives the soup a highly aromatic, pleasantly sharp and spicy savor. It also includes chopped onions, root vegetables and flour. There are many different recipes of tripe soup, some of them simpler, others more complicated. It could be served as a soup and also as a meal.
