Salat hatzilim or Baba ghanoush is a popular dish of eggplant (aubergine) mashed and mixed with various seasonings. The eggplant is sometimes cooked over an open flame before peeling, so that the pulp is soft and has a smoky taste A particularly Israeli variation is made with tahina and other seasonings such as garlic, lemon juice, onions, herbs and spices, with mayonnaise. Eggplant salads are also made with yoghurt, or with feta cheese, chopped onion and tomato, or in the style of Romanian Jews, with roasted red pepper. Baba ghanoush is usually eaten as a dip with pita bread, it also being sometimes added to other dishes.
