Ensalada en Escabeche

Ensalada en Escabeche, literally translated as Marinated Salad, is a traditional side dish in Guatemala, which has a great variety of recipes, beginning with only vegetable Ensalada and finishing with fish and meat amongst the ingredients. However, a classical pickled salad has the following making parts: carrots, cauliflower, green beans, broccoli, onions, garlic, chili pepper, bay leaves and vinegar.


All vegetables are simmered with a little salt and when become medium-tender bay leaves, onions, garlic and chili pepper are added. To complement the dish with a more marinated taste, vinegar is poured into the pan then is covered with a lid and cooked until ready. The salad is commonly served with greens, meats (traditionally chicken) or fish, being nicely garnished and offered on a wide plate or bowl.
