Fasolakia Freska (Φασολάκια φρέσκα) is a Greek vegetarian stew made of fresh green beans with potatoes, zucchini, tomato sauce and herbs (parsley and fennel seeds). Fasolakia is served as a vegetarian main staple and is eaten especially during the Great Lent. It may also be served as a side dish accompanying various meat courses. Fasolakia Freska is very popular in Greece and is often served in Greek restaurants.
A variation of Fasolakia Freska, known as Soupa Fasolakia Freska, includes meat broth, flour and margarine. The dish is usually served hot with small croutons.
