Fava is a very nutritious and healthy vegetarian dish made from Fava beans. It is widely consumed throughout Turkey and the whole Mediterranean zone. Fava is traditionally served cut into squares or diamonds. Only beans, chopped onion, extra virgin olive oil, lemon juice, salt and sugar are used for the Turkish version. The beans are soaked in water overnight, and the following day are peeled and cooked for about an hour and half together with all the other ingredients. Then beans are blended and set to cool and thicken for several hours. The cold fava paste is cut, poured over with extra virgin olive oil and lemon juice, and garnished with parsley, fresh dill or mint.
