A sausage is a food made from ground meat and often salt, herbs, and spices. Typically, the sausage is formed in a casing traditionally made from intestine, but sometimes synthetic. Some sausages are cooked during processing and the casing may be removed afterwards.

Scotch Fish Sausages are made of cooked white fish and some other seafood, such as salmon or prawns. The preparation of this dish calls for first frying the fish and mushrooms in butter, after what add breadcrumbs, beaten eggs, parsley and/or shallot, basil, salt and pepper to the mixture. This is ultimately shaped like sausages (meaning rolled in some oatmeal or filled in some cling film) and then fried or boiled. Fish Sausages are served with sauce, bread, or other side dishes.
